Here is just a little bit of what has changed my family's health lives...

 

  

                My story about food is similar to a lot of people struggling with their health. We try lots of other things to feel better because changing a diet and cooking more is difficult to do. It’s difficult to pack a lunch, go to the grocery for fresh food more often and turn down delectable treats and meals from friends and family when they don’t meet a dietary restriction.  But I finally dove right in and had amazing results. Everyone needs a little bit different style of real food in their life, but I believe it comes down to a few major changes:

  1. More fruits and vegetables

    1. Without always adding a dressing or dip with them.

    2. Many of our calories and genetically modified organisms come through dressings and dips

  2. Removing processed foods

    1. Especially ones containing partially hydrogenated oils, high fructose corn syrup and MSG

    2. Packaged foods aren’t necessarily horrible, we just need to be cognizant of what and how many unnecessary ingredients are in the packaged foods.

  3. Decreasing or removing gluten and dairy products

    1. At least for a time to allow our digestion to get back on track

    2. These 2 foods have been changed a lot from their original form, not generally prepared properly, are difficult to digest and cause much inflammation in our intestines and bodies.

  4. Decreasing hormones in one’s food

    1. Specifically meats and dairy products

  5. Incorporating positive bacteria into your digestive system everyday

    1. This can be accomplished through the well-known acidophilus pills, or

    2. Fermented and cultured foods.

    3. And limiting the use of antibiotics!

When my husband and I made these changes 5 years ago, we both lost 15 pounds without meaning to.  Neither of us had many pounds to loose, but when we made the changes above the pounds came off and my energy came back relentlessly.  I was now more excited to go out and do things after work than he was.

  • 1/2 cup coconut butter (spread), important for this to be warmed previously so that it is not separated.
  • 1/2 cup coconut oil, in liquid state via double boiler  (microwaving would not keep it raw)
  • 3 drops of Young Living peppermint oil added to the coconut oil (or 2 tsp peppermint extract)
  • 1/2 Cup Cacao Powder
  • 1/4 cup thick, raw honey
  • 1 teaspoon vanilla extract
  • 2 T chia seeds
  • 1 cup unsweetened, shredded coconut

-makes one 9X9 pan or approx. 24 small mini muffin tins

  1. In a food processor (or with handheld mixer), combine all ingredients until well combined (though this should not take more than 30 - 60 seconds.

  2. Scoop mixture into mini muffin tins.**  Refrigerate for approx. 30 minutes or until they are hard.

  3. Store in refrigerator. Serve cold.

  4. **I prefer mini muffins for quick treats to go, but if you prefer it looking like fudge you can spread mixture in a 9x9 pan.

    1. After refrigerating 30 minutes, remove the pan, and cut into squares (if it’s too stiff, then let sit 10 minutes at room temperature and try again). You can also line the pan with parchment paper and then lift the entire square of chilled fudge onto a cutting board to cut into squares.
